 Meditation Retreat Learn to cook some vegetarian dishes you can serve up this festive season

This is a great opportunity to give back to Emoyeni while learning how to cook some vegetarian dishes you can serve up this Festive Season.  Emoyeni is hosting its first combination gardening and cooking retreat where you will help revamp the herb garden at Emoyeni as a legacy project and take part in a hands-on cooking demonstration.  The retreat will consist of the following:

  • Lectures on tips for maximising flavour and nutrition in vegetarian and vegan cooking
  • How to plant and maintain herbs – bring along your favourite herb plant as a contribution and share how you use it in your cooking
  • A cooking demonstration where you will work in pairs to prepare a vegetarian buffet for everyone to share (Covid-19 protocols observed)
  • Access to the recipes and the recorded cooking lesson
  • Membership of a new Emoyeni vegetarian recipe group

Morning and evening meditations will also be on the programme so you return feeling fully rejuvenated and refreshed.  The cooking classes will be led by Wendy Poulton who is a regular cook at Emoyeni and who has a passion for tasty and nutritional food.

o Pumpkin and sage roulade with quinoa stuffing
o Butter lettuce and pickled onion and walnut salad with a herb vinaigrette
o Freekeh salad with a spicy yoghurt dressing
o Chilli Chocolate brownies with oranges and mint
o Frozen grape sangria with cinnamon and star anise

Dinner

o Green salad with olive and caper dressing

Lunch

o Caprese salad with basil pesto
o Yoghurt flatbreads
o Beetroot Wellington with a mushroom thyme sauce
o  Mixed green veggies with parsley gremolata
o Rosemary Hassel back potatoes
o Cranberry, lemon, macadamia truffles with cardamon olive oil cake and berries
o Blueberry ginger drink with thyme
